Senior Meat Operations Specialist

Job descriptionYou must have a minimum of 2 years' experience as a Head Butcher in an upscale environment. Culinary school degree or equivalent required. Strong leadership, communication, problem-solving, and interpersonal skills are essential. You should have superior customer service, teambuilding, and conflict resolution skills. Knowledge of personalized services and guest satisfaction evaluation techniques is a plus. Experience with inventory management and cost control is desirable. Intermediate computer software skills required. Oversee the daily operation of the Butcher Shop, including thawing, butchering, and preparation of meat and poultry. Direct, coach, support, supervise, and evaluate direct reports. Maintain knowledge of US Public Health Rules and Regulations. Clean and maintain Butcher Shop and thawing rooms. Prepare for USPH inspections. Store received meats and poultry in freezers. Requisition and transport necessary items to thawing rooms. Monitor product yields and portions according to Butcher Manual. Complete Daily Butcher Recaps. Assist with inventory management. Ensure personnel are present, uniformed, and meet company policy standards. Culinary school degree or equivalent. Minimum 2 years' experience as Head Butcher in an upscale environment.
