Key Responsibilities :
- Maintain a smooth and efficient operation of the butcher shop, overseeing team members in their daily tasks.
- Ensure the proper thawing, butchering, and preparation of all meat and poultry used in menus.
- Stay up-to-date with US Public Health Rules and Regulations to ensure compliance.
- Conduct regular cleaning and maintenance of the butcher shop and thawing rooms according to schedule.
- Prepare workstations for inspections and ensure the proper storage and handling of meats.
- Direct team members in storing received meats and transporting items from freezers to thawing rooms.
- Monitor product yields and portions, ensuring effective use of trimmings.
- Complete Daily Butcher Recaps as required by the Executive Chef.
- Assist the Inventory Manager with taking inventory of meat and poultry storage rooms.
- Ensure staff are on time, in proper uniforms, and follow company policies on personal appearance and hygiene.
Financial Responsibilities :
Contain costs through the proper use and maintenance of records, supplies, and equipment.Identify potential expense reductions through cost control.Analyze operational problems and establish controls.Review timesheets and forward them to the Sous Chef for approval.Requisition items in correct quantities within acceptable timeframes.Conduct workstation spot checks to minimize deterioration and waste.Motivational Responsibilities :
Monitor assigned workstation functions and staff performance.Evaluate staff and work procedures to ensure quality standards and service are met.Makes recommendations regarding personnel actions such as new hire requests and discharges.Inspect workstations, work areas, and equipment to ensure efficient service and conformance to standards.Mentor, develop, and provide on-the-job training to staff.Qualifications and Education :
Minimum two years' experience as a Head Butcher in an upscale hotel, resort, cruise ship or convention banqueting service.Culinary school degree required.Strong management skills in multicultural and dynamic environments.Effective communication, problem-solving, decision-making, and interpersonal skills.Superior customer service, team-building, and conflict resolution skills.Knowledge of personalized services including needs assessment techniques and guest satisfaction evaluation techniques.Strong planning, coaching, organizing, staffing, controlling, and evaluating skills.Possess intermediate computer software skills and basic accounting principles understanding.Additional Requirements :
Able to lift 50 pounds frequently and stand for long periods.Ability to maintain a clean and organized workspace.Basic math skills for tracking inventory and sales data.Excellent attention to detail and ability to multitask.
