Role Description

This is a part-time, on-site role for an Executive Chef at The Shalimar Hotel in Mumbai. The Executive Chef will oversee kitchen operations, including menu planning, food preparation, and ensuring quality standards. Key responsibilities involve managing kitchen staff, maintaining food safety standards, monitoring inventory, and coordinating with restaurant management to create an exceptional dining experience for guests. The role will also require creativity in curating innovative culinary offerings to enhance the hotel’s dining reputation.

This role demands a leader who can honour six decades of legacy while driving modern, creative, and operational excellence across varied cuisines and concepts.

Gulmurg Our iconic Indian fine dining restaurant, carrying a rich legacy of more than  60 years . Known for its refined Mughlai, North Indian, and regional favourites, Gulmurg remains one of South Mumbai’s most beloved culinary institutions.

The Bakerie The hotel’s artisanal bakery and patisserie delivering handcrafted cakes, breads, pastries, viennoiserie, and gourmet takeaway products.

Cafe Calma A modern European rooftop restaurant focusing on ingredient-driven cooking, seasonal menus, and a community-dining ethos.

Maikada A cocktail-forward bar serving elevated global bites, bold flavour pairings, and innovative beverage programming.

NRI — Naans & Rolls of India Our cloud kitchen concept offering creative, high-quality Indian rolls and naan-based preparations.

Qualifications

Proven culinary skills in menu planning, food preparation, and recipe creation

Strong team management skills, including leading and developing kitchen staff

Knowledge of food safety regulations and inventory management

Creativity in creating unique and innovative culinary experiences

Exceptional organizational and time-management skills

Experience in fine dining or luxury hospitality settings is a plus

Formal culinary training or an equivalent qualification is preferred

Ability to work in a fast-paced environment and adapt to dynamic situations
