Role Summary :
The Tandoor Cook will manage all aspects of tandoor cooking within our kitchen. This includes marinating, skewering, firing, presenting and ensuring the quality of tandoor breads, kebabs, tikka and other specialties. The role reports to the Executive or Sous Chef and works closely with the kitchen and F&B teams to deliver on our culinary promise.
Key Responsibilities :
- Prepare, marinate and cook items for the tandoor section – e.G., tikkas, kebabs, breads (naan / roti), tandoori-vegetables.
- Operate and maintain the tandoor oven safely and efficiently – monitoring temperature, fuel (charcoal / wood) usage, timing and cleanliness.
- Ensure consistent taste, presentation and portioning of dishes.
- Coordinate with other kitchen sections for production planning, mise en place and service readiness.
- Adhere to food safety, hygiene and sanitation standards (kitchen, tandoor area, tools, utensils).
- Assist in menu development for tandoor offerings – suggest new items, seasonal specials, localised variations.
- Train and mentor junior kitchen staff / commis in the tandoor section.
- Ensure minimal wastage, cost control and correct stock usage.
Requirements & Qualifications :
Minimum 2-3 years of proven experience working as a Tandoor Cook in a hotel / resort / kitchen environment.Strong knowledge of North Indian & Punjabi tandoor cuisine;exposed to coastal variations would be a plus.
Skilled in handling clay ovens (tandoor), skewers, charcoal / wood fired ovens, temperature control.Ability to maintain consistency under high-volume service, whilst upholding quality.Good understanding of kitchen hygiene and safe food handling practices.Good communication skills in English and / or Hindi;knowledge of Konkani / Goan context will be beneficial.
Willingness to work flexible shifts including weekends and high-season demands.
