Your Role at a Glance :

As Chef De Cuisine – Italy , you will lead all culinary operations of San Gimignano , ensuring an exceptional dining experience that reflects Italy heritage and modern sensibilities. You will curate menus, innovate with seasonal ingredients, and engage directly with guests to create bespoke dining experiences. Your leadership will inspire a passionate team to maintain the restaurant’s distinguished reputation for quality, consistency, and flair — in line with the hotel’s legacy of excellence.

What You’ll Do :

  • Lead day-to-day kitchen operations at San Gimignano , maintaining the highest culinary and service standards.
  • Conceptualize, develop, and execute authentic cuisine of Italy and modern Western menus, blending tradition with creativity.
  • Collaborate with the Food & Beverage team to design and present bespoke menus for special occasions and private dining.
  • Demonstrate commercial acumen through accurate menu costing, pricing, and profitability analysis.
  • Plan kitchen operations based on business forecasts, guest profiles, and seasonal availability.
  • Supervise food procurement, inventory management, and waste control aligned with cost efficiency and sustainability goals.
  • Uphold stringent hygiene and food safety protocols in compliance with HACCP , FSSAI , and hotel sanitation standards.
  • Ensure compliance with temperature logs, storage, and hygiene audits across all sections.
  • Lead, train, and mentor the cuisine of Italy kitchen team to foster innovation, discipline, and pride in craftsmanship.
  • Conduct tastings, quality checks, and consistency audits to ensure every dish meets brand standards.
  • Collaborate with the Executive Chef and culinary leadership on promotions, seasonal menus, and wine-pairing experiences.
  • Maintain close coordination with Engineering and Stewarding for equipment care and overall kitchen upkeep.
  • Contribute to strategic planning for restaurant operations, menu engineering, and culinary excellence initiatives.

Who You Are :

  • A passionate culinary professional with 8–12 years of experience in cuisine from Italy, including 3+ years in a managerial role within a luxury or fine-dining environment.
  • Deep knowledge of authentic gastronomy from Italy, regional specialties, and contemporary plating trends.
  • Strong leadership, training, and organizational skills, capable of managing a talented kitchen brigade.
  • In-depth understanding of food safety, hygiene systems, HACCP, and FSSAI compliance .
  • Excellent interpersonal and guest engagement skills with the ability to discuss and design bespoke menus.
  • Commercially astute, with experience in cost control, budgeting, and menu engineering .
  • Hands-on, calm under pressure, and results-oriented, maintaining creativity and precision in a dynamic environment.
