project. As a boutique chef consultancy founded by Chef Vidit Aren, we partner with visionary hospitality brands to create memorable culinary destinations through personalized service, thoughtful storytelling, and operational excellence.
About "Mirari" -
Mirari is a premium-casual, dual-floor concept on the Old Mumbai–Pune Highway near Rhythm Resort.
- Ground Floor : Mediterranean & European comfort with 20–25% Lonavala accents (kokum, jaggery, chikki, strawberry).
- First Floor : Modern Indian small plates, tandoor classics and elevated
"Sunny Da Dhaba"
mains. The idea is to honor the original "Sunny da dhaba" owners and their 30 year old legacy.

Lead every aspect of kitchen operations, from menu trials to plating refinement and team development :
Craft and execute rotating menus ("Seasons of Lonavala") that honor local ingredients and heritageOversee dual-cuisine cooking, recipe standardization, and dietary accommodations (Jain, gluten-free, pescatarian)Build a high-integrity culture across two Sous Chefs, managing ground-floor, first-floor and prep teamsImplement food-cost controls (28–35%), waste-management systems and FSSAI / HACCP complianceDevelop the "Kitchen Food Bible" with standardized recipes, yields and plating guidesCollaborate with consultants and purchase teams on ingredient sourcing, menu transitions and guest feedbackWho You Are
8–10 years in modern kitchens with expertise in Modern Indian and Mediterranean cuisinesProven success managing dual-concept or multi-floor premium-casual operationsStrong leadership, collaboration with FOH / Bar teams, and hands-on training skillsPassion for clean flavors, cultural storytelling and elevated presentationBased in Mumbai / Pune / Lonavala region (or ready to relocate full-time)Why Join Us
