As our Senior Food Technologist , you'll play a pivotal role in developing, optimizing, and maintaining products that meet both creative and compliance standards. You'll be the bridge between R&D, production, and quality, ensuring every sweet we make is as delightful as it is safe.
This role is based at our Byculla facility in Mumbai and reports to the R&D Head – Bombay Sweet Shop . It's ideal for someone who loves being hands-on in the kitchen as much as in documentation, compliance, and innovation.
YOU WILL BE RESPONSIBLE FOR
Research & Development
Support new product development through benchmarking, stability testing, and ship trials across retail and seasonal projects.
Conduct sensory evaluations, nutritional analysis, and shelf-life studies to ensure product quality and consistency.
Collaborate with operations, marketing, and production teams to establish product specifications aligned with food safety standards.
Apply advanced food processing techniques to improve product efficiency and quality.
Stay up to date with emerging food technology trends and integrate innovative solutions into development processes.
Coordinate with suppliers, development partners, and flavour houses for new ingredients, packaging, and process optimization.
Troubleshoot production and packaging issues and support continuous improvement.
Conduct raw material and ready-to-serve (RTS) product market research for innovation opportunities.
Regulatory & Compliance
Assist with manufacturing unit licensing and ensure adherence to FSSAI and related regulations.
Support documentation for certifications like FSSC 22000, HACCP, Legal Metrology, and FOSTAC .
Ensure packaging and labelling compliance for both domestic and export products as per applicable laws.
Maintain awareness of food safety, quality, and legal standards applicable to production.
Quality Assurance & Control
Oversee compliance with all safety, legal, and quality requirements.
Identify and resolve potential issues in the production process affecting product safety or quality.
Manage and update FSMS documentation including SOPs, HACCP plans, and quality manuals.
Conduct internal audits, manage non-conformities, and implement corrective actions.
Coordinate external audits and certification renewals.
WHAT YOU NEED
Education : B.Sc / B.Tech / M.Sc in Food Technology or related discipline.
Experience : 2–3 years in the FMCG or food processing industry, with hands-on experience in product development, audits, and documentation.
Certifications (Preferred) : Legal Metrology, FSSC 22000, FOSTAC, HACCP.
Skills :
Strong knowledge of food safety systems (BRCGS Issue 9, FSSC 22000 v6, ISO 9001 : 2015).
Excellent documentation, analytical, and audit-tracking abilities.
Proficiency in product formulation software and laboratory techniques.
Strong cross-functional collaboration and project management skills.
Proficient in MS Office and Google Suite tools (Excel, Word, PowerPoint, Drive).
