Hiring : Assistant Manager – Stores, Purchase, Cost & Inventory

The Cape Goa is looking for a detail-driven and reliable Assistant Manager – Stores, Purchase, Cost & Inventory to manage all back-end operations for our restaurant.
This role is essential to keeping service smooth, costs controlled, and the kitchen & bar fully supported.
Key Responsibilities
Stores & Inventory (Restaurant Only)
Manage all restaurant store areas (kitchen, bar & dry stores).
Maintain accurate stock levels and conduct regular physical stock counts.
Receive, check, and record all incoming goods daily.
Ensure proper storage, cleanliness, FIFO rotation, and labelling.
Purchasing
Handle daily restaurant purchasing for kitchen and bar.
Liaise with local suppliers, negotiate rates, and ensure timely deliveries.
Maintain vendor lists, price updates, and quality standards.
Track shortages, delivery discrepancies, and coordinate with the kitchen for indents.
Costing & Consumption Control
Support food & beverage cost control through daily consumption monitoring.
Track wastage, yield, portion control, and recipe quantities.
Assist with menu costing and bar costing.
Report cost variances and recommend corrective actions.
Systems & Reporting
Maintain daily stock entries in inventory software / excel.
Prepare weekly & monthly consumption, cost, and variance reports.
Maintain clear documentation : POs, GRNs, supplier invoices, rate sheets.
Requirements
2–4 years’ experience in restaurant stores / purchase / inventory / costing.
Strong excel and basic inventory software knowledge.
Highly organised, reliable, and excellent with numbers.
Good communication and vendor-handling skills.
Ability to support a busy restaurant kitchen & bar efficiently.
