What are we broadly expecting : -

We are seeking a seasoned and innovative Sous Chef to lead culinary, production floor and operational excellence at our ice cream and baked goods production facility. This role encompasses overseeing end-to-end production processes, ensuring operational efficiency, and fostering collaboration across departments. The Sous Chef will also play a key role in production planning, execution of targets, and ensuring smooth operations during high-demand periods when the facility operates in day and night shifts.

Job Role and KRA : -

Production Planning & Execution : -

  • Develop and implement detailed production plans to meet demand forecasts and ensure timely delivery of targets.
  • Organize and oversee daily production activities for ice creams, gelato, bars, mini bites, macrons, popsicles, choco tacos and other frozen treats, ensuring adherence to production schedules, compliance and quality standards.
  • Lead production teams to meet short- and long-term goals.
  • Monitor ingredient inventory levels and collaborate with the purchase team to order supplies as needed, minimizing waste and controlling costs.
  • Good understanding of the product recipe and process of manufacturing
  • Good understanding of RM and PM
  • Working knowledge of manufacturing methods, process improvements, problem solving techniques and procedures.
  • Oversee day and night shift operations during busy periods to ensure seamless production.
  • Analyze production metrics to identify inefficiencies and implement corrective measures.

Facility and Equipment Oversight

  • Oversee the maintenance, repair, and upgrading of production equipment and infrastructure to ensure uninterrupted operations.
  • Ensure compliance with environmental standards, including waste management and energy efficiency practices.
  • Conduct regular facility inspections to uphold hygiene, safety, and operational excellence.
  • Cross-Functional Collaboration
  • Coordinate with the supply chain team to align production capacity with demand planning and inventory requirements.
  • Collaborate with logistics teams to ensure timely dispatch and delivery of finished goods.
  • Partner with QA / QC teams to ensure adherence to food safety regulations and internal quality benchmarks.
  • Troubleshoot production issues and provide hands-on assistance to resolve quality or efficiency concerns, leading by example.
  • Maintain a clean and organized production area, ensuring compliance with sanitation regulations and safety standards.
  • Assist with plant process improvement projects.
  • Compliance & Risk Management

  • Ensure strict compliance with food safety and quality standards, including HACCP, GMP, and ISO certifications.
  • Monitor regulatory changes affecting production and procurement, implementing necessary adjustments.
  • Culinary & Product Development

  • Oversee the production of ice cream and baked goods, ensuring consistency and adherence to recipes.
  • Lead R&D efforts to create new products and refine existing recipes aligned with market trends.
  • Collaborate with marketing and sales teams to develop seasonal offerings and innovative product lines.
  • Manage sensory evaluations and quality testing to maintain superior taste, texture, and presentation.
  • Team Leadership & Training

  • Continually train staff on safety, sanitation, and operational best practices to maintain high standards.
  • Continually train staff on proper production techniques, equipment operation, and safety protocols, maintaining a focus on quality and efficiency.
  • Communicate effectively with team members to assign tasks, coordinate workflow, and prioritize production needs.
  • Identify opportunities for improvement, their root causes, and solutions to correct them within a team-based work environment
  • Evaluate team member performance and assist team members’ performance improvement, accountability, and advancement through effective goal-setting, feedback, and training.
  • Foster a positive and inclusive work environment, promoting teamwork, communication, and mutual respect among staff members.
  • Responsible for contributing to achievement of facility goals for safety, people, quality, cost-savings
  • Skills and Preferred Qualifications and Experience : -

  • Minimum of 8-10 years in large-scale food production, with at least 5 years in ice cream or baked goods manufacturing in a managerial role
  • Degree in culinary arts, food technology, production management, or related fields.
  • Experience in an Ice Cream processing facility or from pastry industry will be given preferences
  • Experience working in food production or manufacturing environment, with a strong understanding of production processes and procedures.
  • In-depth knowledge of ice cream and baked goods production with an eye for innovation.
  • Expertise in food safety standards, including HACCP, GMP, and ISO requirements.
  • Skilled in managing production workflows, procurement, and facility operations.
  • Experience in managing Inventory on ERP / Software and able to generate reports and derive analytical conclusion.
  • Excellent communication skills, with the ability to effectively convey information, instructions, and feedback to team members.
  • Strong organizational skills and the ability to multitask and prioritize tasks in a fast-paced environment.
  • Flexibility to work evenings, weekends, and holidays as required to support production schedules and special events.
