Job descriptionCraft and execute rotating menus ('Seasons of Lonavala') that honor local ingredients and heritage Oversee dual-cuisine cooking, recipe standardization, and dietary accommodations (Jain, gluten-free, pescatarian) Build a high-integrity culture across two Sous Chefs, managing ground-floor, first-floor and prep teams Implement food-cost controls (28–35%), waste-management systems and FSSAI / HACCP compliance Develop the 'Kitchen Food Bible' with standardized recipes, yields and plating guides Collaborate with consultants and purchase teams on ingredient sourcing, menu transitions and guest feedback 8–10 years in modern kitchens with expertise in Modern Indian and Mediterranean cuisines Proven success managing dual-concept or multi-floor premium-casual operations Strong leadership, collaboration with FOH / Bar teams, and hands-on training skills Passion for clean flavors, cultural storytelling and elevated presentation Based in Mumbai / Pune / Lonavala region (or ready to relocate full-time) Shape an ambitious, high-integrity kitchen from the ground up in one of Maharashtra's most beautiful hill stations Work closely with Chef Vidit Aren's boutique consultancy team on concept refinement, brand development and service flows Opportunity to innovate across cuisines, craft signature programs and mentor a talented brigade Transform your culinary vision into a legacy—join us at Mirari!
Aren Hospitality & Food Consultancy is seeking an Executive Head Chef to lead the kitchen for our flagship 'Mirari' project. As a boutique chef consultancy founded by Chef Vidit Aren, we partner with visionary hospitality brands to create memorable culinary destinations through personalized service, thoughtful storytelling, and operational excellence.
About 'Mirari' -
Mirari is a premium-casual, dual-floor concept on the Old Mumbai–Pune Highway near Rhythm Resort.
- Ground Floor : Mediterranean & European comfort with 20–25% Lonavala accents (kokum, jaggery, chikki, strawberry).
- First Floor : Modern Indian small plates, tandoor classics and elevated 'Sunny Da Dhaba' mains. The idea is to honor the original 'Sunny da dhaba' owners and their 30 year old legacy.
- Basement Prep Facility : Dedicated kitchen systems built for high-volume consistency.
