Commis 2 Duties & Responsibilities
A Commis 2 (junior kitchen role) assists in food preparation and supports senior chefs in a la carte.
Core Daily Duties
- Prepare mise-en-place : Chop, portion, and organize ingredients per recipes and station needs.
- Assist Chef de Partie / Commis 1 in cooking, plating, and presenting dishes to quality standards.
- Maintain workstation cleanliness, sanitize equipment, and follow HACCP hygiene protocols.
- Stock / re-stock kitchen items, check inventory, and rotate stock (FIFO system).
- Operate basic equipment (grills, ovens, fryers) and monitor food temperatures.
- Support buffet setups, clear used items, and minimize waste / costs.
- Acknowledge shift handovers, attend briefings, and report issues to supervisors.
