Responsibilities :
- Prepare and execute traditional South Indian dishes using authentic recipes and regional techniques.
- Manage kitchen operations during peak hours ensuring timely and consistent food delivery.
- Maintain high standards of food safety hygiene and cleanliness in compliance with commercial kitchen regulations.
- Supervise and mentor kitchen staff promoting efficiency teamwork and adherence to recipes.
- Source and manage ingredients with attention to freshness quality and seasonal availability.
Requirements
Requirements :
Minimum 25 years of hands-on experience in a South Indian or Kerala-style kitchen.Expertise in traditional cooking methods including steaming tempering roasting and slow-cooking.In-depth knowledge of regional spice blends coconut-based gravies tamarind curry leaves and other core ingredients.Proven experience in preparing both vegetarian and non-vegetarian South Indian dishes.Basic proficiency in English or Hindi (Malayalam or Tamil is a plus).Required Skills :
