JOB DESCRIPTION

BlueBlood, an amazing eye-catching and reputed F&B concept located in Hilton The Hague with a daring but authentic Nikkei cuisine, is bringing exciting flavors to the city center of The Hague. A great opportunity has come up as we are looking for fresh blood! We are in search of a true game-changer, an inspiring Nikkei specialist, someone with a proven record in upscale Nikkei cuisine and experienced in leading diverse and inclusive teams towards success. As Chef de Cuisine of BlueBlood, you are more than a foodie. You are ready to become the ultimate Nikkei flavor master of the BlueBlood Kitchen. Together with your high culinary standards, you will be challenged to share and inspire. With your team, you will not only set a high standard in food quality, but also improve guests' and team members' satisfaction. But a chef de cuisine also :

  • Lead the BlueBlood kitchen team and ensure compliance with all Food & Beverage policies according to Hiltons high HACCP standards and procedures.
  • Produce superior quality dishes, presentations, and flavors.
  • Be responsible for menu engineering and be the creative mind and expert behind all the BlueBlood dishes.
  • Test foods to ensure proper preparation and temperature.
  • Manage purchasing, staffing, and oversee all food preparation.
  • Train the team to develop their culinary skills with a focus on Nikkei cuisine.
  • Manage the team by taking care of team member requests and conducting performance reviews.
  • Set and support the achievement of kitchen targets including budgets.
  • Provide information to supervisors, co-workers, and team members by telephone, in writing, and / or in person.

The blood type we are looking for :

  • Previous experience as Chef de Cuisine with at least 2-3 years of provable experience in the upscale Nikkei cuisine.
  • Must have extensive knowledge about Nikkei sushi, meat, and seafood preparations according to the Nikkei cuisine.
  • Great teamwork skills and attention to detail, and you preferably have led a team of at least 10 team members.
  • Positive outlook and outgoing personality; you enjoy guest contact and menu explanation at the table.
  • Serve as a role model to demonstrate appropriate behaviors.
  • Analyze information and evaluate results to choose the best solution and solve problems.
